Papaveri e Papere, our intimate restaurant immersed in the green Tuscan countryside, is the brainchild of a collaboration between friends, two entrepreneurs and a restaurateur, back in 2009.
Created with the aim of achieving the right balance between Tuscan traditions and contemporary innovation, our restaurant conducts constant research in the kitchen. We treat each ingredient with respect and attention applying contemporary cooking techniques to the typical ingredients that can be found in Tuscan cuisine.

In keeping with this culinary philosophy our restaurant’s décor creates a warm, yet at the same time, modern atmosphere. In the summer months it is possible to eat outside on the veranda, immersed in the green hills of the Valdegola valley, which is home to the famous white truffle of San Miniato

A traditional yet contemporary menu

We curate a menu combining traditional Tuscan staples, (with thoughtful care given to selecting local meats, farm fresh vegetables, and freshly caught fish), with an innovative and original approach to their preparation and presentation.
For each season we create a special menu that revolves around enhancing the genuine flavors and ingredients particular to that season.
Each dish is then paired with a specially selected wine from our wine cellar.

At Papaveri e Papere, you’ll find Tuscany in every dish we prepare as well as in how we describe our dishes. Although it is our priority to source our ingredients from a short and local supply chain, we will not shrink away from excellent quality foods that can be sourced beyond our Tuscan borders. When occasions arise which allow us to create dishes exalting a combination of local ingredients with more exotic flavors, we seize the opportunity.  We believe innovation is the key to understanding and living our present moment to its fullest potential. In the kitchen, in the dining room, as well as in life, we try to ensure that technology and new ideas blend happily with our beloved traditions.
